Grilled Pizza Snacks

1 package Pizza Sauce Mix
10 (10 inch) flour tortillas
1 (16 oz) package shredded mozzarella cheese
4 ounces sliced pepperoni, cut into quarters
melted butter or margarine

Directions:

Prepare pizza sauce according to package directions. Heat a large skillet over medium heat. Drizzle a small amount of margarine into the skillet to coat the bottom. Place one tortilla in the skillet. Spoon a tablespoon of pizza sauce onto half of the tortilla. Sprinkle a small amount of cheese and pepperoni over the sauce. Fold the other half of the tortilla over the filling, and cook until golden on both sides, flipping as needed. Repeat with remaining tortillas.

Tips:

Sally's Famous Pizza Sauce Mix packages contain 2 inner packets. You will only need one of the inner packets for this recipe, but I like to make up both packets so I'll have extra sauce for dipping.

Sliced pepperoni is fully cooked when you buy it. But you
can get rid of a ton of fat if you microwave it before using it in
this recipe. Spread it out in a single layer on a plate that has been
covered with a couple of paper towels. Place another paper towel
on top. Microwave for about 45 seconds. The recipe directions
call for the slices to be quartered, which I usually do at this point.

Any additional ingredients that you like on pizza can be added to
this recipe. Just don't overfill your tortillas, or it gets a little messy.
Also, these snacks do not cook as long as a regular pizza, so make sure that all of your ingredients are fully cooked before adding them.
