Taco Grande Casserole

1 lb. lean ground beef or ground turkey
2 Tbsp. Taco Seasoning Mix
1 can Rotel tomatoes*
1 can (15 ounces) tomato sauce
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) chick peas
1 can (15 ounces) corn, drained
1 cup shredded cheddar cheese
1 cup slightly crushed tortilla chips
Taco toppings (sour cream, onions, lettuce, tomatoes)
Brown meat in a large skillet on medium-high heat. Drain fat. Stir in Taco Seasoning Mix, Rotel tomatoes, tomato sauce, beans, chick peas, and corn. Bring to a boil. Reduce heat and simmer for 5 minutes. Spoon into a 2-quart baking dish. Sprinkle with cheese and tortilla chips. Bake at 400 degrees F for 10 minutes or until cheese is melted. Serve with taco toppings.

This makes a large casserole, so I sometimes divide it into two smaller dishes and freeze one. I freeze it without the cheese and tortilla chips, and add them later, when I am ready to bake.

*If you've never used Rotel tomatoes, they are great! They come in about 4 varieties, so choose the one that suits your family the best.
